Creamy Coconut Chia Pudding with Blueberries (Make-Ahead Breakfast) (PCOS & MAFLD Friendly)
Breakfast is the meal that sets the tone for every meal that comes after it. Get it wrong, and you spend the rest of the day negotiating : a 10 a.m. crash, a 2 p.m. crash, and a drive-thru window by six. Get it right, and the whole day goes quiet. Which is exactly why I keep a row of these creamy coconut chia puddings sitting in the back of my refrigerator!

Silky Greek yogurt and a modest splash of coconut milk soaks into tiny chia seeds overnight until they swell into a thick, spoonable, custardy pudding. A small hint of vanilla, a pinch of sea salt, and fresh blueberries across the top are all you need to make this a nourishing morning start. It’s creamy and gently sweet, which makes these portable puddings perfect for sensitive stomachs early in the morning.
My fiancé has recently become a big fan of chia pudding and for good reason! It’s light but satisfying, contains protein and fiber, and are super versatile when it comes to flavors- I have a Chocolate Earl Grey Chia Pudding recipe which we both love!
Best of all, this is a ten minute job. One bowl, one whisk, five jars, and then pop them in the fridge so the refrigerator does the actual work. Between the gym, a shower, getting ready for work and a commute, these pre-prepped chia puddings are a lifesaver for someone who’s always rushing in the mornings but wants something reliable and liver friendly.

Why Chia Seeds Are Great For Your Blood Sugar
Chia is somewhere between 30-50% soluble fiber by weight, and that fiber is called mucilage – a polysaccharide that grabs water and never lets go. Drop the seeds into liquid and within minutes, each one is wearing a translucent jacket of gel. That gel is the entire mechanism in controlling blood sugar spikes.
Once it reaches your stomach, it slows gastric emptying and physically gets in the way of glucose diffusing across the intestinal wall. Your breakfast stops behaving like a glass of juice and starts behaving like a extended-release capsule.
The sugar still arrives. It just arrives politely, over the course of hours, instead of all at once. This helps the liver manage the incoming energy better- overeating and dumping your blood with sudden, high levels of sugars and fats is one cause of de novo lipogenesis, or liver-fat generation.
A 2023 meta-analysis of viscous soluble fiber trials found reductions of 0.93 mmol/L in fasting glucose, 0.47% in HbA1c, and 3.64 μIU/mL in fasting insulin, with the strongest results above roughly 8.3 g per day (Lu et al., 2023). Two tablespoons of chia lands you right in that window.
The Truth Is In The Research
In a randomized, controlled dose-response trial, researchers baked chia into white bread and watched postprandial glycemia fall in step with the dose – and whole seeds performed as well as ground ones (Ho et al., 2013).

Anthocyanins: The Blue Pigment Your Liver Loves
The color of a blueberry is not decoration. Anthocyanins are the flavonoid pigments responsible for that deep blue-purple, and they are among the most studied polyphenols in liver research, largely because a fatty liver is an oxidatively stressed liver.
Stored fat sitting in hepatocytes gets attacked by free radicals in a process called hepatic lipid peroxidation. Think of it as the “rusting” of liver fat, and anthocyanins as the coating that slows the rust.
The population data here is genuinely striking. In an analysis of 2,288 American adults, people in the highest 25% of anthocyanin consumption had roughly half the odds of NAFLD compared to the lowest 25% (Liu et al., 2023). And in a randomized controlled trial of obese, insulin-resistant adults, a twice-daily blueberry bioactive smoothie improved insulin sensitivity by 22.2% against 4.9% in the placebo group (Stull et al., 2010).

Let’s Be Honest About Coconut Milk
A lot of “healthy” recipes out there tout coconut milk as a nutritious, gentle, non-dairy miracle alternative for creamy dishes. While its versatility cannot be denied, unfortunately it’s not that simple for us folks who deal with MAFLD!
Coconut carries a “health halo” it has not fully earned, and when you are actively working to reverse MAFLD, a nightly can of full-fat coconut milk is actively working against you.
Coconut milk is very high in saturated fat. More so than many forms of traditional dairy. And the most important human overfeeding trial we have on this topic found that saturated fat raised liver fat more than unsaturated fat or simple sugars did, while also driving up ceramides and insulin resistance (Luukkonen et al., 2018). This study should make you pause and reconsider if coconut milk for breakfast, lunch and dinner is wise when trying to heal MAFLD.
So this recipe is built deliberately. It uses non-fat Greek yogurt as its main base to keep the chia pudding custardy and creamy, a modest splash of coconut milk, and the secret ingredient – coconut extract, which add zero calories or grams of fat to this recipe but adds an enormous depth of coconut flavor.
This recipe lands each jar at roughly 4.3 grams of saturated fat – about what you would get from a 1/2 tablespoon of butter, delivered inside a matrix of eleven-plus grams of fiber and an abundance of polyphenols.
- What To Embrace: Canned light coconut milk, and coconut extract. It gives you the creaminess and the tropical perfume at roughly half the fat of the full-fat can.
- What To Minimize: Coconut cream, coconut manna, and full-fat canned milk as a daily habit. Save those for the occasional curry, not for a breakfast you eat five mornings a week.
- The Swap: If your ALT and AST are elevated right now and you want to be conservative, use ½ cup unsweetened cashew or soy milk and the coconut extract. The pudding still sets beautifully.

Why Your Ovaries Care About What You Eat At 8 A.M.
PCOS and MAFLD are cousins in metabolic disease. MAFLD is a real comorbidity of PCOS, and around 40% of US adults deal with some grade of fatty liver, regardless of PCOS status. For many, insulin resistance is a main driver of both conditions.
When circulating insulin stays elevated, it signals the ovarian theca cells to produce more androgens, and it simultaneously suppresses sex hormone-binding globulin so that more of that testosterone floats around unbound and biologically active.
If you have PCOS, a steep insulin surge at breakfast is not a neutral event for you. It is a hormonal instruction that you body recognizes and actions on.
A fiber-forward, low-glycemic first meal flattens that surge. Fewer steep insulin peaks across the day means less androgenic pressure on the follicles – it lets the ovaries “rest” from an input they have been receiving on repeat for most likely, years.
Chia contributes something else here too. It is one of the densest plant sources of alpha-linolenic acid on earth, and omega-3 status keeps showing up in the PCOS literature.
A 2024 review reported that marine omega-3 supplementation lowered triglycerides by an average of 29.21 mg/dL, improved HOMA-IR in trials running longer than eight weeks, reduced hepatic fat content, and lowered plasma bioavailable testosterone (Albardan et al., 2024).
One important nuance to note however, is that an earlier meta-analysis of three small trials found no significant HOMA-IR effect at all (Sadeghi et al., 2017), and plant ALA converts to EPA and DHA at a famously inefficient rate. Chia is a genuine contributor to your omega-3 intake, but it is not a substitute for sources like oily fish, which I still aim to eat at least twice a week!

Everything You’ll Need To Make The Best Coconut Chia Pudding
Nine ingredients, and seven of them are pantry staples that will sit happily in your cupboard for a up to a year.
- Chia Seeds: The star of the show! Two tablespoons per serving delivers roughly ten grams of fiber and about five grams of ALA.
- Light Coconut Milk: The creaminess. Shake the can hard before opening, because the fat separates and you want it emulsified.
- Non-fat Greek Yogurt: The main base. Thick and rich with a high protein profile, this will help you stay fuller, longer.
- Vanilla and Coconut Extracts: The flavor-enhancer that keeps saturated fat sensible.
- Allulose: Near-zero glycemic load and it does not have the cooling aftertaste that erythritol leaves behind. Monk fruit or a few drops of liquid stevia substitute directly.
- Blueberries: Some beautiful blues to jazz up this pudding! Softly sweet and a helpful does of anthocyanins and fiber.
- Toasted Coconut Flakes: A modest sprinking on top to give the pudding some interesting texture and even more heady coconut flavor.
- Salt: The salt is the one people skip, but don’t miss out! Without it, the pudding tastes flat. With it, everything else comes forward.

Meal Prep Math: Five Jars, One Sunday
You’ve been there. I’ve been there. Standing in the kitchen at 8:15 with your keys already in your hand, deciding that coffee counts as breakfast because the alternative is being late.
The reason I keep coming back to chia pudding is that it removes the decision entirely. Ten minutes on Sunday produces four to five jars, and each one holds its texture in the refrigerator for a full five days – it actually improves on days two and three as the seeds finish hydrating. The whole system works perfectly for those who are on the go and need something to fuel up with that they know is doing their hormones and their liver good.
And let’s talk about consistency. That is where the real metabolic payoff lives. Fiber this dense feeds the bacteria in your colon, which ferment it into short-chain fatty acids, chiefly butyrate. Butyrate enters the portal vein and travels straight to the liver, where it strengthens gut barrier integrity and dampens hepatic inflammatory signaling (Zhang et al., 2021). Your gut and your liver have a direct relationship, and fiber is the assistant making sure both are happy at all times.
- How To Store Them: Wide-mouth 8 oz mason jars with the lid on. Five days in the refrigerator. Add the fresh blueberry topping the morning you eat it so it stays plump.
- The Satiety Stays For Hours: That gel does not collapse in your stomach. It creates a real fullness signal without a corresponding insulin spike, which is why one jar carries me comfortably to lunch.
Make This Chia Pudding Your Own
The base is a canvas. Once you have the ratio memorized – roughly one part chia to eight parts liquid by volume – you can rebuild it endlessly.
- Blackberries or tart cherries in place of blueberries, for a different anthocyanin profile
- A tablespoon of unsweetened cacao powder whisked into the base
- Toasted cashews or a few crushed pistachios on top
- Orange zest and a pinch of cinnamon (cinnamon is a wonderful sugar replacement that I use regularly!)
- A tablespoon of ground flaxseed or hemp hearts alongside the chia, for lignans
Cooking Tips and Tricks
A note on clumping: the single most common chia pudding failure is one hard brick at the bottom of the jar and thin liquid on top. The fix is to whisk the pudding until it becomes slightly thick and wobbly. This texture prevents the chia seeds from sinking to the bottom prematurely. Do not skip it
A note on sweetener: allulose does not crystallize or leave a cooling finish, which is why I default to it. If you use liquid stevia, start with 6 drops and taste the base before the chia goes in – you cannot easily adjust once the gel sets.

Creamy Coconut Chia Pudding with Blueberries
Ingredients
- 3 cups non-fat unsweetened Greek yogurt
- ¾ cup light coconut milk, shaken hard
- 1 tsp vanilla extract
- 1 tsp coconut extract
- ¼ cup allulose
- ½ cup chia seeds
- ¼ tsp sea salt
For The Coconut-Blueberry Topping
- 1 cup fresh or frozen blueberries
- ½ cup toasted unsweetened coconut flakes
- cinnamon, for dusting optional
Instructions
- In a medium bowl, whisk together the Greek yogurt, light coconut milk, allulose, vanilla extract, coconut extract, and sea salt until the sweetener has fully dissolved and no coconut fat globules remain visible on the surface. Taste and adjust sweetness if desired.
- Add the chia seeds and whisk vigorously for a full 30 seconds. Let the mixture rest for a couple of minutes until loosely wobbly, then whisk vigorously again. This second whisk is what prevents the seeds from settling into one dense clump at the bottom.
- Divide the base evenly among five 8 oz jars, seal, and refrigerate for at least 4 hours or overnight. The pudding is ready when a spoon dragged through the surface leaves a clean trench that holds its shape.
- Top each jar with fresh blueberries and the toasted coconut flakes just before serving.
- Seal any jars you are not eating immediately and store in the refrigerator for up to 5 days.
