popsicle molds
- 3 cups ripe fresh mango, peeled and chopped
- 1 cup unsweetened coconut water
- Juice of two large limes (about 3 tablespoons)
- 1 packet of Drip Drop peach flavored sugar-free electrolyte powder
- 1-2 tbsp Tajin (Chili Lime seasoning)
In a high-powered blender, combine the frozen mango chunks, coconut water, fresh lime juice, and electrolyte powder. Blend on high until completely smooth and creamy. You want a thick but pourable puree. if it's too thick to pour into the popsicle molds, splash in another tablespoon or two of coconut water.
Sprinkle a tiny pinch of Tajín directly into the bottom of each individual popsicle mold cavity.
Pour the mango puree into your molds, leaving a tiny bit of space at the top. For an extra kick, you can sprinkle a light layer of Tajín right down the center of the mold halfway through pouring, or save the heavy dusting for the moment you pull them out of the freezer.
Insert your popsicle sticks and transfer the molds to the freezer. Let them freeze solid for at least 4 to 6 hours (overnight is best).
Run the outside of the popsicle molds under warm water for 10 to 15 seconds to loosen them up. Gently pull the popsicles out. Serve immediately or wrap and store in the freezer to eat at a later time.
