Just 5 ingredients-olive oil, salt, white wine, onion, and mussels make these Steamed New Zealand Green Shelled Mussels! What started as a novelty buy quickly became a regular rotation item in our house- green shelled mussels hail from New Zealand and give me huge helpings of wanderlust!Serve these mussels with crusty bread, pasta, or a simple salad, and enjoy a beautiful thing that the ocean has gifted us.
2lbGreen shelled mussels frozen is easiest but fresh mussels work well too
2tbspextra virgin olive oil
1big pinch sea salt
1yellow onion, finely chopped
1cupdry white wine (Pinot Grigio is a great choice)
fresh lemon wedges and chopped fresh parsley, to serve
Instructions
Heat the olive oil in a large deep pan over medium-high heat.
Add the chopped onion and salt and cook until onion is tender, about 3-4 minutes.
Add the mussels and the white wine.
Shake the pan to even out the mussels and cover pan with a tight-fitting lid.
Turn the heat up to high and steam the mussels for 8 minutes until cooked. If using fresh mussels, the shells will open up when the mussels are cooked.
Discard any unopened shells and serve with fresh lemon and parsley.
Notes
Note* If using fresh mussels, scrub them and soak in cold water for 20 minutes to release any debris, and then pull out the "beard" before cooking with them.
